Mushrooms With Sherry Recipe

Fresh Mushrooms With Sherry and Walnuts Recipe

Ingredients Needed:

Two Tbs dairy butter
2 Tablespoons healthy oil
1/2 pound (3 cup) fresh mushrooms
1/2 cup finely chopped and roasted walnuts
2 tbsp sherry (dry)
One T. fresh lemon juice
1 t. finely grated orange/lemon peel
Two Tbls parsley (chopped)
Salt to taste

Heres What You Need To Do:

In a skillet or frying pan heat gently and melt the butter and oil together.

Turn the heat to medium and put the mushrooms in the skillet, cook lightly for a few minutest, stirring gently.
Add walnuts, sherry, lemon juice and citrus peel. Saute the mix for about a minute, stirring well to make sure the mushrooms are well coated with the juices.

Add salt to taste, and sprinkle with chopped parsley just before serving.

A Cake Recipe With Chocolate and Zucchini (Courgette)

This is a tasty and different recipe for a cake, that the whole family will enjoy.

A Recipe for Cake Using Zucchini (Courgette) and Chocolate

Ingredients Needed:

half a cup to 1 C. chocolate chips
3 zucchini, circa six inches long, shredded (approximately 2 cps)
One tsp cinnamon spice
2 1/2 C. plain white flour
3 eggs
Half C. real butter
1 tsp vanilla flavouring
1/2 C. sugar
One Cup brown or demerara sugar
A half cup of canola oil
half a cup buttermilk
4 Tablespoons cocoa powder
One tsp table salt
Two teaspoons bicarb of soda

Heres What You Need To Do:

Whilst you are preparing the ingredients, preheat oven to 325 degrees F.

Grease a 9″ x 13″ cake pan and put to one side.

In a large mixing bowl,mix both the sugars, the oil and the butter.
Add eggs, the buttermilk and the vanilla and mix thoroughly.

With the aid of a sieve, sift the baking soda, cocoa, flour, cinnamon and salt to make one.

Combine the two mixtures

Stir in zucchini and mix well.

Pour it all into pan and spinkle the top with chocolate chips.

Recipe for Chicken Cooked in Cider

Chicken is justifiably one of the most popular meats thoughout the whole world.
It is almost fat free, is an excellent source of protein, exceedingly versatile and plays a starring role in many diet recipes. Here is a great recipe that will satisfy your family and friends.

It requires:

One chicken (approximately 3.5 lb)
Two C. of apple cider
6 Fresh Apples (peeled and quartered)
salt (as needed)
pepper (as needed)
1 tsp. cornstarch
1/2 cup light whipping cream
One tablespoonful of freshly squeezed lemon juice
1/3 cup of butter
2 tablespoons of olive oil
1/4 teaspoon cinnamon (not obligatory)
4 scallion onions, (chopped fine)
Two whole cloves
1/4 teaspoonful ground ginger
1 sprig of parsley, (finely chopped, for decoration)
1/2 tsp. dried thyme
Two teaspoons of cane sugar

Description:

Clean the Organic Chicken and dry it well.
Mix a little pepper and salt and rub it into the chicken (both inside and out)
Drizzle the lemon juiice over the apple.

Melt half the butter in a skillet then add the oil.
Add half of the apples to the pan and cook slowly for five min. until browned slightly
Mix in the ginger and give it a few stirs, cooking a little longer to enable the ginger to develop it’s flavours.
Stuff the apple mixture into the chicken and close-up the chicken by tying or using a wooden or metal skewer.

Add the rest of the butter to the pan and heat until it melts and then add the chicken to the skillet and gently brown it, browning it all over.
Put the organic chicken into a casserole pot with a good lid.
Take the remaining apples, the spring onions, ground cinnamon, dried thyme, sugar and cloves and put them in the skillet.

Fry gently for 2-3 minutes then add the traditional cyder and increase the heat to start the mixture boiling.

Once the cider is at boiling point, add it to the casserole and replace the lid, using foil or wax paper to ensuer a good tight seal.

Put the pot in the oven and cook for about 45 minutes at 200 Centigrade

When the time is up, transfer it to a warmed plate to keep warm whilst the gracy/sauce is prepared.

If there is any fat in the pot, skim it off and then boil the juices down until there is approx one cup remaining.

Pour in the whipping cream and cornstarch, mixing well until it is nice and thick.
Add salt and pepper to taste, and pour the sauce over the organic chicken

Sprinkle the parsley garnish over and serve.

If you are entertaining guests, you could add side servings of cauliflower or grilled mushrooms and new potatoes.
